- 3 ripe bananas mashed
- 1 1/2 cups almond flour
- 1 cup gluten-free oat flour
- 1/3 cup maple syrup
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 tbsp ground flaxseed
- 1/4 cup melted coconut oil
- 1/4 tsp sea salt
Instructions
- Preheat oven to 350°F and line loaf pan with parchment paper.
- Mash bananas in a large bowl until mostly smooth.
- Add maple syrup, coconut oil, vanilla, vinegar, and flaxseed; whisk to combine.
- Add almond flour, oat flour, baking soda, cinnamon, and salt; fold gently.
- Pour batter into loaf pan and smooth the top; add banana slices if desired.
