Ingredients

  • 3 ripe bananas mashed
  • 1 1/2 cups almond flour
  • 1 cup gluten-free oat flour
  • 1/3 cup maple syrup
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp ground flaxseed
  • 1/4 cup melted coconut oil
  • 1/4 tsp sea salt


Instructions

  1. Preheat oven to 350°F and line loaf pan with parchment paper.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Add maple syrup, coconut oil, vanilla, vinegar, and flaxseed; whisk to combine.
  4. Add almond flour, oat flour, baking soda, cinnamon, and salt; fold gently.
  5. Pour batter into loaf pan and smooth the top; add banana slices if desired.
  6. Bake for 50–60 minutes; check with a toothpick for doneness.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
