Ingredients

  • 2 apples, peeled and diced
  • 2 tsp ground cinnamon
  • 1/3 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 12 tbsp milk or lemon juice for glaze


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Toss diced apples with some cinnamon and brown sugar; set aside.
  3. Cream butter and sugar until fluffy, then add eggs and vanilla.
  4. Mix flour and baking powder separately, then combine with wet mix, alternating with milk.
  5. Pour half the batter into the loaf pan, layer with apples and cinnamon sugar, then repeat.
  6. Swirl the layers with a knife to marble the apple and cinnamon mix.
  7. Bake for 55–60 minutes, or until a toothpick comes out clean.
  8. Let cool for 10 minutes, then transfer to wire rack and drizzle with glaze once fully cooled.
