Ingredients

  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 2 tsp cream of tartar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup apple butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup sugar + 1 tsp cinnamon (for rolling)


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. Cream butter and sugars together until light and fluffy. Add apple butter, egg, and vanilla; mix well.
  4. Gradually add dry ingredients to the wet mixture and mix until just combined.
  5. Roll dough into balls and coat with cinnamon-sugar mixture.
  6. Place on baking sheet and bake for 9–11 minutes until edges are set.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill the dough for thicker cookies if desired.
