Ingredients

  • 1 cup peeled and chopped apples
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/3 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 12 tbsp milk or apple juice (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. Whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix egg, sugars, melted butter, milk, and vanilla until smooth.
  4. Combine wet and dry ingredients, then fold in apples.
  5. Spoon batter into muffin cups, filling 3/4 full.
  6. Bake for 12–15 minutes until golden and a toothpick comes out clean.
  7. Mix powdered sugar with milk or juice to make glaze.
  8. Dip or drizzle glaze over warm bites. Cool before serving.
