Ingredients
- 1 cup peeled and chopped apples
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1/3 cup milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
- 1–2 tbsp milk or apple juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- Whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, mix egg, sugars, melted butter, milk, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in apples.
- Spoon batter into muffin cups, filling 3/4 full.
- Bake for 12–15 minutes until golden and a toothpick comes out clean.
- Mix powdered sugar with milk or juice to make glaze.
- Dip or drizzle glaze over warm bites. Cool before serving.
