Ingredients
- 1 cup pumpkin purée
- 2 medium apples, peeled and diced
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 2/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- For streusel: 1/2 cup flour, 1/4 cup sugar, 1/2 tsp cinnamon, 3 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C) and line muffin tin with paper liners.
- Whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
- In another bowl, whisk pumpkin, eggs, sugars, oil, and vanilla until smooth.
- Mix wet and dry ingredients, then fold in diced apples.
- Make streusel: mix flour, sugar, cinnamon, and melted butter until crumbly.
- Fill muffin cups 3/4 full and top with streusel.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool in tin for 5 minutes, then transfer to wire rack to cool fully.
