Ingredients

  • 2.5 lbs chuck beef, cut into large chunks
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 carrots, sliced
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 cups red wine (such as Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 1 tsp thyme
  • 2 bay leaves
  • 8 oz mushrooms, sliced
  • 1 cup pearl onions (optional)
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 325°F (165°C).
  2. Dry the beef and brown it in olive oil in batches. Set aside.
  3. Sauté carrots and onions until softened. Add garlic and tomato paste; cook for 1 minute.
  4. Sprinkle flour and stir to coat evenly.
  5. Return beef to the pot. Add wine, broth, thyme, bay leaves, salt, and pepper. Bring to simmer.
  6. Cover and place in oven. Cook for 2.5 to 3 hours until beef is tender.
  7. Meanwhile, sauté mushrooms and pearl onions in butter.
  8. Add mushrooms and onions to stew 20 minutes before serving.
  9. Remove bay leaves, adjust seasoning, and serve hot.
