Ingredients

  • 1 whole beef tenderloin (about 34 lbs)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp Dijon mustard (optional)
  • 1 tsp salt
  • 1 tsp freshly ground black pepper


Instructions

  1. Let tenderloin sit at room temperature for 30 minutes.
  2. Trim silver skin and pat meat dry.
  3. Tie with kitchen twine for even cooking.
  4. Mix olive oil, garlic, rosemary, thyme, salt, pepper (and mustard if using).
  5. Rub mixture all over the tenderloin.
  6. Place on rack in roasting pan. Roast at 425°F for 20–25 minutes or until internal temp is 130–135°F.
  7. Transfer to cutting board and rest for 15 minutes.
  8. Remove twine, slice, and serve warm.
