Ingredients

  • 2 lbs chuck beef, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 1 lb baby potatoes
  • 2 tbsp tomato paste
  • 1 1/2 cups red wine
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • 1 tsp thyme
  • 1/4 cup flour
  • Salt and pepper to taste


Instructions

  1. Pat beef dry and toss with flour, salt, and pepper.
  2. Heat olive oil in Dutch oven and brown beef in batches; set aside.
  3. Sauté onion in the same pot, then add garlic and tomato paste.
  4. Pour in red wine and scrape up browned bits from the bottom.
  5. Add beef broth, Worcestershire sauce, bay leaf, and thyme. Return beef to pot.
  6. Cover and simmer for 1½ to 2 hours until beef is tender.
  7. Add carrots and potatoes. Simmer uncovered for 30–40 minutes more.
  8. Adjust seasoning. Remove bay leaf before serving.
