Ingredients
- 2 lbs chuck beef, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 1 lb baby potatoes
- 2 tbsp tomato paste
- 1 1/2 cups red wine
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 bay leaf
- 1 tsp thyme
- 1/4 cup flour
- Salt and pepper to taste
Instructions
- Pat beef dry and toss with flour, salt, and pepper.
- Heat olive oil in Dutch oven and brown beef in batches; set aside.
- Sauté onion in the same pot, then add garlic and tomato paste.
- Pour in red wine and scrape up browned bits from the bottom.
- Add beef broth, Worcestershire sauce, bay leaf, and thyme. Return beef to pot.
- Cover and simmer for 1½ to 2 hours until beef is tender.
- Add carrots and potatoes. Simmer uncovered for 30–40 minutes more.
- Adjust seasoning. Remove bay leaf before serving.
