Ingredients

  • 34 lb chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 45 carrots, cut into chunks
  • 1 lb baby potatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 2 tbsp flour
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Pat roast dry and season with salt, pepper, and flour.
  2. Heat oil in Dutch oven and sear roast on all sides. Remove and set aside.
  3. Sauté onion until soft, then add garlic, tomato paste, and balsamic vinegar.
  4. Pour in beef broth and Worcestershire, scraping up browned bits.
  5. Return roast to pot and add carrots, potatoes, thyme, and bay leaf.
  6. Cover and simmer on low for 3 to 3½ hours until meat is tender.
  7. Remove roast, slice or shred, and return to pot to absorb sauce.
