Ingredients
- 3–4 lb chuck roast
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4–5 carrots, cut into chunks
- 1 lb baby potatoes
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp balsamic vinegar
- 2 tbsp flour
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Pat roast dry and season with salt, pepper, and flour.
- Heat oil in Dutch oven and sear roast on all sides. Remove and set aside.
