Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tomato, diced
  • 3 cups vegetable broth
  • 1 bell pepper, diced
  • 1/2 cucumber, diced
  • 2 tbsp fresh cilantro, chopped
  • 2 eggs
  • 2 tbsp olive oil
  • Salt and black pepper, to taste


Instructions

  1. Rinse the red lentils thoroughly under cold water.
  2. Heat olive oil in a pot, add onion and sauté until translucent. Add garlic and ginger, cook for another minute.
  3. Add tomato and cook until softened. Pour in vegetable broth and bring to a boil.
  4. Add lentils, reduce heat, and simmer for about 20 minutes until soft and creamy.
  5. Meanwhile, chop bell pepper and cucumber; set aside.
  6. Heat olive oil in a skillet, fry eggs until whites are set and yolk is runny. Season with salt and pepper.
  7. Ladle dal into bowls, top with veggies and fried egg, garnish with cilantro, and serve.
