Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tomato, diced
- 3 cups vegetable broth
- 1 bell pepper, diced
- 1/2 cucumber, diced
- 2 tbsp fresh cilantro, chopped
- 2 eggs
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Rinse the red lentils thoroughly under cold water.
- Heat olive oil in a pot, add onion and sauté until translucent. Add garlic and ginger, cook for another minute.
- Add tomato and cook until softened. Pour in vegetable broth and bring to a boil.
- Add lentils, reduce heat, and simmer for about 20 minutes until soft and creamy.
- Meanwhile, chop bell pepper and cucumber; set aside.
- Heat olive oil in a skillet, fry eggs until whites are set and yolk is runny. Season with salt and pepper.
- Ladle dal into bowls, top with veggies and fried egg, garnish with cilantro, and serve.
