Ingredients

  • 6 large eggs
  • 1 cup cooked quinoa
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1 tsp baking powder
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 1/3 cup crumbled feta cheese
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F and grease or line a muffin tin.
  2. In a large bowl whisk eggs milk oil baking powder salt and pepper.
  3. Stir in quinoa bell pepper green onions feta and cheddar until combined.
  4. Divide mixture evenly into muffin cups filling about ¾ full.
  5. Bake for 20–25 minutes or until golden and set.
  6. Cool slightly then remove from pan and enjoy warm or cold.

  • Use leftover quinoa to save time.
