Ingredients
- 12 oz smoked sausage, sliced
- 2 cups cooked rice
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tbsp Cajun seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tbsp olive oil in a skillet over medium heat. Sear sausage until browned. Remove and set aside.
- Add remaining oil if needed. Sauté onion and bell peppers until soft.
- Add garlic and tomato paste. Cook for 1 minute.
- Stir in cooked rice. Break up clumps and mix well.
- Add sausage back to the pan. Sprinkle in Cajun seasoning, salt, and pepper. Stir to coat.
- Let cook for 3–4 minutes to crisp the bottom slightly.
- Garnish with chopped parsley and serve hot.
