Ingredients

  • 12 oz smoked sausage, sliced
  • 2 cups cooked rice
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat. Sear sausage until browned. Remove and set aside.
  2. Add remaining oil if needed. Sauté onion and bell peppers until soft.
  3. Add garlic and tomato paste. Cook for 1 minute.
  4. Stir in cooked rice. Break up clumps and mix well.
  5. Add sausage back to the pan. Sprinkle in Cajun seasoning, salt, and pepper. Stir to coat.
  6. Let cook for 3–4 minutes to crisp the bottom slightly.
  7. Garnish with chopped parsley and serve hot.
