  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup apple, peeled and diced
  • 1/2 cup soft caramels, chopped


Instructions

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream the butter and sugars until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet mixture and mix until combined.
  6. Fold in diced apples and chopped caramels.
  7. Scoop dough onto baking sheets, spacing cookies 2 inches apart.
  8. Bake for 11–13 minutes until edges are golden and centers look set.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
