Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cups cooked rice
- 1 can black beans, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1 red bell pepper, diced
- 2 green onions, chopped (for garnish)
Instructions
- Preheat oven to 375°F.
- Cook ground beef and onion in a skillet until browned. Drain grease and stir in taco seasoning.
- In a large bowl, combine beef mixture, cooked rice, beans, tomatoes, bell pepper, sour cream, and 1 cup of cheese.
- Spread the mixture into a greased 9×13 baking dish and top with the remaining cheese.
- Bake uncovered for 20 minutes or until cheese is melted and bubbly.
- Garnish with chopped green onions and serve warm.
