Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 red bell pepper, diced
  • 2 green onions, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F.
  2. Cook ground beef and onion in a skillet until browned. Drain grease and stir in taco seasoning.
  3. In a large bowl, combine beef mixture, cooked rice, beans, tomatoes, bell pepper, sour cream, and 1 cup of cheese.
  4. Spread the mixture into a greased 9×13 baking dish and top with the remaining cheese.
  5. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  6. Garnish with chopped green onions and serve warm.
