Ingredients
- 1 package cheese tortellini (about 10-12 oz)
- 1 lb ground beef
- 1 small onion diced
- 2 cloves garlic minced
- 1 tbsp olive oil
- 2 cups enchilada sauce
- 1 1/2 cups shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook tortellini in salted boiling water according to package instructions. Drain and set aside.
- Heat olive oil in a skillet. Sauté onion until soft, then add garlic and cook for 30 seconds.
- Add ground beef and cook until browned. Season with salt and pepper.
- Pour in enchilada sauce and simmer for a few minutes.
- Stir in cooked tortellini until well coated.
- Transfer to a baking dish and top with shredded cheese.
