Ingredients

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk or cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Brown the ground beef in a large pot, then transfer to a bowl and set aside.
  2. Melt butter in the same pot and sauté onion and garlic until soft.
  3. Sprinkle in flour and stir to form a roux.
  4. Slowly whisk in beef broth and add potatoes. Bring to a boil.
  5. Reduce heat and simmer until potatoes are fork-tender (about 12–15 minutes).
  6. Return beef to the pot and stir in milk or cream. Warm through.
  7. Gradually add shredded cheddar, stirring until melted and smooth.
  8. Season with salt and pepper to taste. Garnish with parsley and extra cheese before serving.
