Ingredients

  • 1 lb ground beef
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 8 small flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 tbsp olive oil
  • Sour cream for serving
  • Fresh parsley or cilantro for garnish


Instructions

  1. Cook ground beef in a skillet until browned. Add onion and garlic and cook until soft.
  2. Stir in taco seasoning with a splash of water. Simmer and set aside.
  3. Heat a clean skillet and lightly oil one side of a tortilla. Place it oil-side down.
  4. Layer with cheese, beef mixture, and more cheese. Top with another tortilla, oil-side up.
  5. Cook until bottom is golden, then flip and cook the other side until crispy and melted.
  6. Remove from pan, let rest briefly, then slice into wedges.
  7. Serve warm with sour cream and garnish with herbs.

  • Use pre-shredded cheese for convenience but block cheese melts better.
