Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar (plus more for rolling)
  • 1/3 cup pumpkin puree
  • 1 egg yolk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Cream butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in pumpkin puree, egg yolk, and vanilla until combined.
  5. Add dry ingredients to wet and mix until just combined.
  6. Roll dough into balls and coat with granulated sugar.
  7. Place on baking sheet and gently press tops.
  8. Bake 10–12 minutes until edges are set. Cool on rack.

Notes

  • Use pure pumpkin puree not pumpkin pie mix.
  • Chill dough before baking for extra chewiness.
  • Add a pinch of cloves for bold spice flavor.
  • Freeze dough or baked cookies for later.
