Ingredients
- 1 lb chicken breasts or thighs
- 6 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup milk
- 4 tbsp butter, divided
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Heat 2 tbsp butter in a large pot. Add onions, carrots, and celery; cook until softened. Add garlic and cook 1 minute.
- Add chicken and chicken broth. Simmer 20-25 minutes until chicken is cooked through.
- Remove chicken, shred with forks, and return to the pot.
- In a bowl, mix flour, baking powder, salt, and pepper. Add 2 tbsp melted butter and milk; stir until just combined.
- Drop spoonfuls of dough onto simmering broth. Cover and cook 15 minutes until dumplings are fluffy and cooked through.
- Season with salt and pepper, garnish with parsley, and serve warm.
