Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1/2 onion, chopped
  • 2 tbsp butter
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mix rice, chicken broth, cream of chicken soup, onion, garlic powder, salt, and pepper.
  3. Pour mixture into a greased baking dish and top with chicken pieces. Dot with butter.
  4. Cover with foil and bake for 45 minutes.
  5. Remove foil and bake for another 10-15 minutes until golden and rice is fluffy.
  6. Garnish with chopped parsley and serve.
