Ingredients

  • 3 cups shredded cooked chicken
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 onion, chopped
  • 1 tbsp olive oil
  • Fresh cilantro, for garnish


Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, sauté onion in olive oil until soft. Add chicken and 1/2 cup enchilada sauce; mix to coat.
  3. Place chicken mixture and some cheese in each tortilla; roll up and place seam-side down in baking dish.
  4. Pour remaining enchilada sauce over tortillas and sprinkle with remaining cheese.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. Garnish with cilantro and serve warm.
