Ingredients
- 1 lb chicken breasts, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large yellow onion, sliced
- 6 slices provolone cheese
- 4 hoagie rolls
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp chopped green onions
Instructions
- Slice the chicken, peppers, and onion thinly for quick, even cooking.
- Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and garlic powder, and cook until golden and cooked through. Remove to a plate.
- In the same skillet, add more oil if needed and cook peppers and onion until soft and caramelized.
- Return chicken to skillet, mix with veggies, and lay cheese on top. Cover until cheese melts.
- Fill hoagie rolls generously with the cheesy chicken mixture. Toast under the broiler if desired.
- Garnish with green onions and serve hot.
