Ingredients

  • 1 lb chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 6 slices provolone cheese
  • 4 hoagie rolls
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp chopped green onions


Instructions

  1. Slice the chicken, peppers, and onion thinly for quick, even cooking.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and garlic powder, and cook until golden and cooked through. Remove to a plate.
  3. In the same skillet, add more oil if needed and cook peppers and onion until soft and caramelized.
  4. Return chicken to skillet, mix with veggies, and lay cheese on top. Cover until cheese melts.
  5. Fill hoagie rolls generously with the cheesy chicken mixture. Toast under the broiler if desired.
  6. Garnish with green onions and serve hot.
