Ingredients

  • 12 oz spaghetti
  • 2 cups cooked chicken breast, shredded
  • 8 oz mushrooms, sliced
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook spaghetti in salted water until al dente. Drain and set aside.
  2. Melt butter in a large skillet, cook mushrooms until golden. Add garlic and cook 1 minute.
  3. Sprinkle flour, stir, then slowly whisk in chicken broth. Add heavy cream and simmer until thickened.
  4. Stir in chicken and sour cream. Season with salt and pepper.
  5. Add cooked pasta and toss to coat. Stir in half of the cheddar and Parmesan.
  6. Transfer to a baking dish, top with remaining cheese. Bake at 375°F for 20-25 minutes until bubbly and golden.
  7. Garnish with parsley and serve hot.
