Ingredients
- 6 bone-in skin-on chicken thighs
- 2 tbsp olive oil
- 1/2 cup fresh parsley chopped
- 3 cloves garlic minced
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt to taste
- Black pepper to taste
Instructions
- In a bowl, mix parsley, garlic, olive oil, vinegar, oregano, pepper flakes, salt, and pepper to make chimichurri. Set aside.
- Season chicken thighs with salt and pepper.
- Heat oil in a skillet and sear chicken skin-side down for 7–8 minutes until golden.
- Flip, spoon some chimichurri over the top, and transfer skillet to a 400°F oven.
- Bake for 20–25 minutes until chicken is cooked through (165°F internal temperature).
- Rest for 5 minutes, then serve with more chimichurri sauce.
