Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 cups whipped cream
  • Red gel food coloring
  • Green gel food coloring
  • 1/2 cup red velvet cake crumbs (optional)


Instructions

  1. Preheat oven to 325°F (160°C) and prepare a water bath.
  2. Mix graham cracker crumbs and melted butter and press into bottom of springform pan. Freeze while preparing filling.
  3. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until combined.
  4. Pour filling over crust. Bake in water bath for 55–65 minutes until edges are set but center is slightly jiggly.
  5. Cool at room temperature for 1 hour, then refrigerate at least 6 hours or overnight.
  6. Divide whipped cream into two bowls. Tint one red, the other green. Pipe swirls on top of chilled cheesecake.
  7. Sprinkle red velvet cake crumbs on top for decoration. Serve chilled.
