Ingredients

  • 1 lb flank steak
  • 2 cups cooked rice
  • 1 lime, juiced
  • ¼ cup chopped cilantro
  • 1 cup corn (fresh or frozen)
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 2 scallions, chopped
  • 1 tbsp olive oil
  • Salt and pepper, to taste


Instructions

  1. Season steak with olive oil, salt, and pepper. Let sit for 10–15 minutes.
  2. Grill or pan-sear steak for 3–4 minutes per side. Let rest before slicing.
  3. Toss cooked rice with lime juice, cilantro, olive oil, and salt.
  4. Heat corn if using frozen. Prep avocado and scallions.
  5. Slice rested steak against the grain into thin strips.
  6. Assemble bowls with rice, corn, steak, avocado, scallions, and sesame seeds.
  7. Finish with an extra squeeze of lime juice before serving.
