Ingredients
- 1 lb flank steak
- 2 cups cooked rice
- 1 lime, juiced
- ¼ cup chopped cilantro
- 1 cup corn (fresh or frozen)
- 1 avocado, sliced
- 1 tbsp sesame seeds
- 2 scallions, chopped
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Season steak with olive oil, salt, and pepper. Let sit for 10–15 minutes.
- Grill or pan-sear steak for 3–4 minutes per side. Let rest before slicing.
- Toss cooked rice with lime juice, cilantro, olive oil, and salt.
- Heat corn if using frozen. Prep avocado and scallions.
- Slice rested steak against the grain into thin strips.
- Assemble bowls with rice, corn, steak, avocado, scallions, and sesame seeds.
- Finish with an extra squeeze of lime juice before serving.
