Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • For filling: 2 tbsp softened butter, 1/3 cup brown sugar, 1 tbsp ground cinnamon
  • For icing: 1 cup powdered sugar, 1–2 tbsp milk


Instructions

  1. Cream butter and sugar until fluffy, then beat in egg and vanilla.
  2. Whisk flour, baking powder, and salt separately, then add to wet mixture.
  3. Divide dough in half, chill for 30 minutes.
  4. Roll one half into a rectangle and spread with cinnamon filling.
  5. Roll into a log and slice into 1/2-inch rounds.
  6. Place on lined baking sheets and bake at 350°F for 10–12 minutes.
  7. Cool cookies completely on wire rack.
  8. Mix icing ingredients and pipe in swirls over each cookie.
