  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar

  • 2 tablespoons granulated sugar + 1/2 teaspoon cinnamon (for topping)


Instructions

  1. Preheat oven to 350°F and grease or line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, brown sugar, granulated sugar, eggs, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients, mixing gently until just combined.
  5. Pour batter into loaf pan and smooth the top.
  6. Mix cinnamon sugar topping and sprinkle evenly over the batter.
  7. Bake for 55–65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
