Ingredients
- 1 cup pumpkin purée
- 1 1/4 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- Oil for frying
- 1/2 cup cinnamon sugar (for coating)
Instructions
- Heat oil in a deep pot to 350°F.
- Whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt in one bowl.
- In another bowl, mix pumpkin, eggs, milk, and vanilla.
- Combine wet and dry ingredients to form a thick batter.
- Drop spoonfuls of batter into hot oil and fry 2–3 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
- While warm, roll fritters in cinnamon sugar to coat.
