Ingredients

  • 6 large eggs
  • 3/4 cup cottage cheese
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped spinach
  • 2 green onions (sliced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or spray for muffin tin


Instructions

  1. Preheat oven to 375°F and grease or line a muffin tin.
  2. Whisk eggs in a bowl until smooth and frothy.
  3. Add cottage cheese bell peppers spinach green onions salt and pepper.
  4. Stir everything together until well mixed.
  5. Divide mixture into muffin cups filling 3/4 full.
  6. Bake for 20–25 minutes until set and golden.
  7. Cool for 5 minutes then serve or store.
