Ingredients

  • 2 ribeye or sirloin steaks
  • Salt and black pepper to taste
  • 1/2 cup unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped


Instructions

  1. In a bowl, mix softened butter with garlic, Dijon, lemon juice, paprika, red pepper flakes, parsley, salt, and pepper. Set aside.
  2. Season steaks with salt and pepper. Let sit at room temp 20 minutes.
  3. Heat a cast iron skillet over high heat. Sear steaks 3–4 minutes per side or until desired doneness.
  4. Transfer steaks to cutting board and let rest for 5–10 minutes.
  5. Top warm steaks with cowboy butter. Slice and serve.
