Ingredients

  • 12 oz fettuccine or linguine
  • 14 oz smoked sausage sliced
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
  2. Brown sliced sausage in a skillet with butter until golden. Set aside.
  3. Add more butter to the skillet and sauté garlic for 1–2 minutes.
  4. Pour in cream and stir in Cajun seasoning. Simmer for 2–3 minutes.
  5. Add Parmesan and stir until sauce thickens and is smooth.
  6. Return sausage to the skillet and add cooked pasta. Toss everything together.
  7. Adjust seasoning with salt and pepper. Add pasta water if needed to loosen the sauce.
  8. Garnish with chopped parsley and serve hot.

  • Use andouille sausage for extra flavor.
  • Add spinach or sun-dried tomatoes for variety.
  • Adjust spice level with cayenne or chili flakes.
