Ingredients
- 1 can chickpeas (400 g), rinsed and drained
- 1 medium sweet potato, grated
- 1 medium carrot, grated
- 1/2 onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/3 cup flour
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
Instructions
- Grate sweet potato and carrot, dice onion, and chop parsley.
- Mash chickpeas in a large bowl until mostly smooth.
- Add sweet potato, carrot, onion, parsley, flour, egg, garlic powder, cumin, salt, and pepper. Mix well.
- Form mixture into palm-sized patties.
- Heat olive oil in skillet over medium heat.
- Cook fritters for 4–5 minutes per side until golden and crispy.
- Drain on paper towels and sprinkle with extra salt if desired.
