Ingredients

  • 1 can chickpeas (400 g), rinsed and drained
  • 1 medium sweet potato, grated
  • 1 medium carrot, grated
  • 1/2 onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup flour
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying


Instructions

  1. Grate sweet potato and carrot, dice onion, and chop parsley.
  2. Mash chickpeas in a large bowl until mostly smooth.
  3. Add sweet potato, carrot, onion, parsley, flour, egg, garlic powder, cumin, salt, and pepper. Mix well.
  4. Form mixture into palm-sized patties.
  5. Heat olive oil in skillet over medium heat.
  6. Cook fritters for 4–5 minutes per side until golden and crispy.
  7. Drain on paper towels and sprinkle with extra salt if desired.

Notes

  • Add cornmeal for extra crispiness.
