Ingredients

  • 3 lbs chuck roast
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1/4 cup tomato paste
  • 2 chipotle peppers in adobo, chopped
  • 1/2 cup beef broth
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt and pepper, to taste
  • Chopped cilantro, for garnish


Instructions

  1. Trim beef and season with salt and pepper.
  2. Add beef to crockpot with onion, bell pepper, and garlic.
  3. In a bowl, mix broth, tomato paste, chipotle, lime, and spices.
  4. Pour sauce over beef. Cover and cook on low 8 hrs or high 4–5 hrs.
  5. Shred beef with forks and return to crockpot. Stir into sauce.
  6. Let sit on warm 10–15 minutes. Garnish with cilantro and lime.
