Ingredients

  • 1.5 lbs flank steak
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tbsp oil
  • 1/2 tsp black pepper
  • 2 tbsp fish sauce (for dipping sauce)
  • 2 tbsp lime juice (for dipping)
  • 1 tbsp toasted rice powder
  • 1 tsp chili flakes
  • 1 tsp sugar
  • 2 tbsp cilantro, chopped
  • 1 small shallot, thinly sliced


Instructions

  1. Whisk soy sauce, fish sauce, oyster sauce, lime juice, brown sugar, garlic, pepper, and oil.
  2. Marinate steak in sauce for at least 2 hours or overnight.
  3. Mix dipping sauce: fish sauce, lime juice, chili flakes, sugar, rice powder, cilantro, and shallots.
  4. Preheat grill to medium-high heat.
  5. Grill steak 3–4 minutes per side for medium-rare.
  6. Let steak rest 5–10 minutes, then slice thinly against the grain.
  7. Serve with spicy dipping sauce and optional rice or veggies.

Notes

  • Use skirt steak as a substitute for flank steak.
  • Make toasted rice powder by dry-toasting and grinding sticky rice.
  • Adjust chili to make it more or less spicy.
  • Let the steak rest before slicing to keep it juicy.
