Ingredients
- 2 lbs flank steak
- 2 tbsp olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 cloves garlic, minced
- 1 tbsp tomato paste
- 1 can (15 oz) crushed tomatoes
- 1/2 cup beef broth
- 1/4 cup white wine
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 bay leaf
- Salt and pepper, to taste
- Fresh cilantro, chopped
Instructions
- Season flank steak with salt and pepper.
- Sear steak in olive oil in Dutch oven. Remove and set aside.
- Sauté onions and peppers until soft. Add garlic and cook 1 minute.
- Stir in tomato paste, then add tomatoes, broth, wine, cumin, oregano, paprika, and bay leaf.
- Return steak to pot. Cover and simmer 2.5 to 3 hours until tender.
- Shred steak and return to sauce. Simmer uncovered 10–15 minutes.
- Garnish with cilantro and serve warm over rice.
Notes
- Chuck roast can be used instead of flank steak.
- Add green olives for a traditional Cuban touch.
