Ingredients

  • 2 lbs flank steak
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 can (15 oz) crushed tomatoes
  • 1/2 cup beef broth
  • 1/4 cup white wine
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh cilantro, chopped


Instructions

  1. Season flank steak with salt and pepper.
  2. Sear steak in olive oil in Dutch oven. Remove and set aside.
  3. Sauté onions and peppers until soft. Add garlic and cook 1 minute.
  4. Stir in tomato paste, then add tomatoes, broth, wine, cumin, oregano, paprika, and bay leaf.
  5. Return steak to pot. Cover and simmer 2.5 to 3 hours until tender.
  6. Shred steak and return to sauce. Simmer uncovered 10–15 minutes.
  7. Garnish with cilantro and serve warm over rice.

Notes

  • Chuck roast can be used instead of flank steak.
  • Add green olives for a traditional Cuban touch.
