Ingredients
- 2 cucumbers
- 1 cup cherry tomatoes
- 1 cup fresh mozzarella balls
- 1/4 cup fresh basil leaves
- 2 tbsp olive oil
- 2 tbsp balsamic glaze
- Salt to taste
- Black pepper to taste
Instructions
- Rinse cucumbers, cherry tomatoes, and basil leaves under cool water.
- Slice cucumbers into rounds and halve the cherry tomatoes. Place them in a large mixing bowl.
- Add mozzarella balls and chopped or torn basil to the bowl.
- Drizzle with olive oil, then season with salt and pepper. Toss gently to combine.
- Transfer to a serving platter and drizzle with balsamic glaze.
- Let sit for a few minutes before serving to let flavors meld.
Notes
- Use fresh mozzarella for best results.
- Wait to add basil until just before serving.
- For extra zing, add a splash of balsamic vinegar instead of glaze.
- Great served on toasted bread as bruschetta!
