Ingredients

  • 2 cucumbers
  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse cucumbers, cherry tomatoes, and basil leaves under cool water.
  2. Slice cucumbers into rounds and halve the cherry tomatoes. Place them in a large mixing bowl.
  3. Add mozzarella balls and chopped or torn basil to the bowl.
  4. Drizzle with olive oil, then season with salt and pepper. Toss gently to combine.
  5. Transfer to a serving platter and drizzle with balsamic glaze.
  6. Let sit for a few minutes before serving to let flavors meld.

Notes

  • Use fresh mozzarella for best results.
  • Wait to add basil until just before serving.
  • For extra zing, add a splash of balsamic vinegar instead of glaze.
