Description

Ingredients

  • 2 cucumbers
  • 2 cups tomatoes
  • 1/2 red onion
  • 2 tbsp chopped fresh parsley
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse cucumbers, tomatoes, onion, and parsley under cold water.
  2. Slice cucumbers and tomatoes into rounds. Thinly slice the red onion.
  3. Add all veggies to a large mixing bowl and sprinkle with chopped parsley.
