Ingredients
- 2 cucumbers
- 2 cups tomatoes
- 1/2 red onion
- 2 tbsp chopped fresh parsley

Instructions
- Rinse cucumbers, tomatoes, onion, and parsley under cold water.
- Slice cucumbers and tomatoes into rounds. Thinly slice the red onion.
- Add all veggies to a large mixing bowl and sprinkle with chopped parsley.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
