Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 large eggs
- 3/4 cup milk
- 1/3 cup olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup chopped mixed olives
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped fresh thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F and grease or line a loaf pan.
- In a bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and thyme.
- In a separate bowl, whisk eggs, milk, and olive oil until smooth.
- Combine wet and dry ingredients, stirring gently.
- Fold in cheese and olives until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 45–50 minutes, or until golden and a toothpick comes out clean.
- Let cool in pan 10 minutes, then transfer to rack to cool completely.
