Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 large eggs
  • 3/4 cup milk
  • 1/3 cup olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped mixed olives
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh thyme
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 350°F and grease or line a loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and thyme.
  3. In a separate bowl, whisk eggs, milk, and olive oil until smooth.
  4. Combine wet and dry ingredients, stirring gently.
  5. Fold in cheese and olives until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 45–50 minutes, or until golden and a toothpick comes out clean.
  8. Let cool in pan 10 minutes, then transfer to rack to cool completely.
