Ingredients
- 2 cups sweetened shredded coconut
- 3/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups chocolate chips (milk or dark)
- 1 tablespoon coconut oil
- Optional: extra coconut for garnish
Instructions
- In a bowl, mix coconut, condensed milk, vanilla, and salt until combined.
- Shape into small balls and place on a parchment-lined tray.
- Freeze for 20–30 minutes until firm.
- Melt chocolate chips and coconut oil in microwave until smooth.
- Dip each ball into chocolate, letting excess drip off.
- Place back on tray and sprinkle with extra coconut if desired.
- Let set at room temp or chill in fridge until chocolate is firm.
- Store in an airtight container and enjoy!
