Ingredients

  • 2 cups peeled and sliced apples
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened for cake, cold for crumb)
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8 or 9×9 pan with parchment or grease.
  2. Peel and slice apples; toss with a bit of cinnamon and sugar.
  3. Make crumb topping: combine flour, brown sugar, cinnamon, salt, and cold butter until crumbly. Set aside.
  4. Cream softened butter and granulated sugar until fluffy. Add eggs and vanilla; beat well.
  5. Whisk dry ingredients separately then alternate adding them with milk to the wet mixture.
  6. Spread half of batter into pan, layer with apples, then the remaining batter and apples.
  7. Sprinkle crumb topping evenly over the top.
  8. Bake for 45–50 minutes until toothpick comes out clean.
  9. Cool before slicing and serving.
