Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 (10 oz) can red enchilada sauce
  • 1 1/2 cups shredded cheddar and Monterey Jack cheese
  • 6 flour tortillas
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. In a skillet, cook ground beef over medium heat until browned.
  3. Add onion and garlic, sauté until soft. Stir in taco seasoning and a few tablespoons of enchilada sauce.
