Ingredients
- 2 English cucumbers, sliced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Slice cucumbers and halve the cherry tomatoes.
- Thinly slice red onion and chop parsley.
- In a large bowl, combine cucumbers, tomatoes, onion, and parsley.
- Add crumbled feta cheese.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently and let sit 10 minutes before serving.
