Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 1 cup shredded cheddar cheese
  • 1 cup chopped romaine lettuce
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a skillet, cook ground beef over medium heat until browned. Drain fat and stir in taco seasoning with a splash of water. Simmer for 2–3 minutes.
