Ingredients

  • 1 ½ cups cooked edamame
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • ½ cup shredded carrots
  • ½ red bell pepper diced
  • ¼ cup chopped parsley
  • 2 tbsp finely chopped white onion
  • 1 tbsp sesame seeds
  • 2 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 garlic clove minced


Instructions

  1. Cook the edamame according to package instructions then drain and cool completely.
  2. Chop all vegetables and herbs as described to make them bite-sized.
  3. In a small bowl whisk together olive oil rice vinegar soy sauce honey and minced garlic to make the dressing.
  4. In a large mixing bowl combine edamame tomatoes cucumber carrots bell pepper onion and parsley.
  5. Pour the dressing over the salad and toss everything gently until evenly coated.
  6. Sprinkle sesame seeds on top before serving and enjoy!
