Ingredients

  • 2 boneless skinless chicken breasts
  • 2 cans Great Northern beans, drained
  • 1 can corn, drained
  • 1 can diced green chiles
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 oz cream cheese
  • Juice of 1 lime


Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add beans, corn, green chiles, diced onion, and garlic on top.
  3. Sprinkle in cumin, chili powder, salt, and pepper. Pour chicken broth over the top.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Remove chicken and shred with forks. Return to the pot and stir.
  6. Add cream cheese and stir until melted and creamy.
  7. Finish with lime juice. Stir well and serve with desired toppings.
