Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/2 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil or butter for greasing


Instructions

  1. Preheat oven to 350°F and grease muffin tin.
  2. In a bowl whisk eggs and milk until smooth.
  3. Add chopped veggies cheese salt and pepper.
  4. Pour into muffin cups about 3/4 full.
  5. Bake for 18–20 minutes until set.
  6. Cool slightly and remove from tin.
