Ingredients

  • 8 oz pasta (linguine or spaghetti)
  • 2 cups corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 3 tbsp lime juice
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp chili powder
  • Salt and black pepper to taste


Instructions

  1. Cook pasta in salted water until al dente.
  2. Prepare corn by cutting kernels off the cob or using thawed frozen corn.
  3. Drain and rinse pasta under cool water.
