Ingredients

  • 3 medium ripe tomatoes sliced
  • ½ red onion thinly sliced
  • 1 green chili or jalapeño thinly sliced
  • ¼ cup chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper


Instructions

  1. Thinly slice the tomatoes and red onion and chop the parsley.
  2. Slice the green chili into thin rings adjusting quantity based on spice preference.
  3. In a small bowl whisk together olive oil lemon juice salt and pepper to make the dressing.
  4. Combine tomatoes onions chili and parsley in a large bowl and toss gently.
  5. Pour the dressing over the salad and mix lightly to coat.
  6. Let it rest for 5–10 minutes before serving to let flavors meld.
