Instructions
- Preheat oven to 350°F. Grease a 9×5 loaf pan.
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, then mix in cider and vanilla.
- Stir in dry ingredients until just combined. Fold in diced apples.
- Pour into loaf pan and smooth the top.
- Bake 50–60 minutes or until a toothpick comes out clean.
- Whisk powdered sugar and cider to make glaze.
